I've eaten the raw egg (w/ soy sauce) and rice many times, never got sick.
Salmonella isn't inside the egg, it's only on the outer shell.
In America they're sanitized to hell, and basically your immune system is a little bitch if you get salmonella, it's just a stomache ache anyway.

Salmonella is a 1 in 20k occurrence in America these days and 40k in Japan. (They vaxx their chickens)
Also salmonella bacteria doesn't proliferate easily at fridge temp so you're likely to ingest a very minor amount if you crack the egg and eat it immediately like in most raw egg dishes.
