I just thought of this myself.

You know e-bikes? What if you took two really simple lightweight single-speed bikes, no gears or anything so there's barely anything to break.
Slap on these generic e-bike conversion crankset/motors that basically just move the crank/chain. Remove the seats and have like a bench connecting both of them. Remove the handlebars and have a connected metal pipe in both the holes with something to steer it. Have some kind of roof (maybe a literal beach umbrella?) for shade and solar panels, have racks for storage and large kWh batteries

You can make an electric car yourself and as far as the law is concerned, it's an e-bike, I could hook up enough supplies to this thing and go deep in the desert to some hideaway spot, and still have a way back out to town.
